  • steamed fishA Favorite Recipe: Chinese Steamed Fish & Vegetables

    Ingredients
    4 (about 1½ lbs) white fish fillets, such as snapper
    2 tablespoons light soy sauce
    1 tablespoon peanut oil
    1 tablespoon cornflour
    1 cup button mushrooms, thinly sliced
    1" piece ginger, thinly sliced
    2 cups snow peas, trimmed, halved diagonally
    steamed rice, to serve


    Preparation method

    1. Place cleaned fish on a flat dish that will fit on a rack or in a large bamboo steamer. Mix soy sauce, peanut oil and cornflour in a small bowl. Season with pepper and pour over fish.


    2. Scatter mushrooms, ginger and snow peas over fish. Cover fish with foil or steamer lid and steam over a wok or pan of boiling water for 5 minutes, or until cooked. Remove fish from steamer, and serve immediately with steamed rice.
